It is especially funny because I am becoming more accurate at choosing the good tea farmers by their personality or energy. I can mostly know their tea by their approach before tasting it. I totally believe in Don’s words! I haven’t met a Tea Farmer yet, but I know well the heart of a true farmer! …and I can also already say that I have had teas that are good and teas that are more-balanced. This make me think that balance must start at the ‘roots’ and kept up throughout the chain in order to be experienced by those who drink from it! But I also believe that finding that balance and character is likewise a very personal journey.
In as my own, I have found true guidance through the knowledge and experience of Don Mei and his Basic Tea Education videos. This particular one was the perfect tool for me prior to my first Tea purchase. Here Don explains his basic guide to the different types of Tea, and his recommendations on the best moments or mood to pair with everyone of them. He classify the Teas into the most common types generally known as white, green, yellow, black (or red) and post-fermented tea. To that list he added naturally scented and flower blossom Teas, which means for me that he probably mostly recognize as Tea only those processed from Camelia sinensis and asamica varietals.
I find truly helpful listen to those that have been in this journey more intimately and longer than I. Then, I left my heart guide me to those Teas that resonate with me at that particular moment. I just hope this can also help you to find your own Flow through the World of Tea!
